We got a variety of aromas – lentil soup simmering on an old range in a blackhouse; carbolic hospital corridors; thick-cut marmalade and blackcurrant, burnt raisins in fruit cake, dark honey and hot-cross buns. Water brought out vanilla, linseed oil, heather moor-burn and chewing liquorice while draining a car’s engine oil. The initial palate gave us malt extract, bramble jelly, toffee, treacle and sugar-coated fennel seeds – along with mouth-tingling and intense sweet smoke, tar and ash. It tasted much sweeter with water – toast and marmalade, raisin and biscuit chocolate tiffin, but still with cumin, charred sticks, liquorice root and pencil ends.
