A sweet, earthy aroma of a steaming, freshly brewed redbush cup of tea was followed by seared vanilla honey cured salmon. On the palate neat absolutely delicious just like a crisp Tyrolean Panini with truffle and speck (distinctive dry-cured, smoked, juniper-flavoured ham only produced in South Tirol). When we added water it turned into a bowl of Cantonese style steamed mussels with a ginger oyster sauce on the nose, whilst the taste became a sweet, smoky, sooty, fruity rumtopf. After six years in an ex-bourbon hogshead we transferred this whisky into a second-fill hogshead with a heavy toast and a medium char.
