Amidst the salted kale and brine of the nose came an olfactory funk that demanded closer inspection. Curiously earthy notes flirted with bramble bushes and old leather, perhaps from the well-used covers of antique books. Fresh thyme and rosemary became incinerated in a blaze of burning sugar and the resulting ash fluttered in the sea breeze to settle on the salted rim of a margarita. A delicious spice was present on the palate like grilled padron peppers encased in a rye bread sandwich. Seaweed mixed with burnt cream over peaches to provide a glorious texture that lasted through to the finish of violets and lapsang souchong tea.
