We prepared malted custard French toast with brioche and warm raspberry ginger compote and macerated strawberries and lemon peel. On the palate neat like spicy homemade rusks, German spiced cookies called Spekulatius or cinnamon, cardamom and clove spiced brownies. Diluted we were preparing a creamy banana bread with coconut and pecans next to cotton candy white chocolate chip cookies. Still hot on the palate, even with a good dash of water, but sweeter, spicy notes were more prevalent like in the French favourite, quatre épices (four spices) where the bite of white peppercorns were softened by the sweet spiciness of ginger, nutmeg and cloves
