A thick and sticky cake mix captivated the senses with clouds of vanilla, cinnamon and nutmeg. Sweet and perfumed aromas hinted towards cherry blossom and talcum powder with a thick wedge of marzipan. White chocolate combined with custard powder and the warm and rounded character of toasted cereals that slowly morphed into Danish pastries. A hint of thyme added a layer of complexity as we approached a palate encased by soft stone fruits and banana skins. A layer of dusty turmeric spice sat on new oak with fennel seeds and fresh strawberries. The mouthfeel swayed between olive oil and orange skin before thickening to marmalade and a sweet finish of gooseberry tart.
